Chancaca is a typical Peruvian, Bolivian, and Chilean warm, sweet sauce made of raw unrefined sugar from sugarcane. It is often flavored with orange peel and cinnamon and is consumed on sopaipillas or picarones. In Colombia, chancacas are a traditional coconut candy.
