Causa is mashed potato seasoned with lime and yellow chili. It is the main component of one of Peru's most popular appetizer dishes, Causa Rellena (stuffed causa). The dish is served cold and filled with usually either tuna or chicken salad. The yellow color and unique flavor come from aji amarillo paste made from a Peruvian chili pepper.
